Garlic Shrimp

Serves 4

1 cup pure olive oil
½ white onion, peeled and chopped
6 large garlic cloves, peeled and chopped
1 teaspoon Kosher salt
½ teaspoon freshly ground black pepper
1 pound medium shrimp shell-on, deveined
1 tablespoon freshly squeezed lemon juice

In a blender, puree 1/2 cup oil, onion, garlic, salt, and pepper until almost smooth. Place shrimp in medium bowl. Pour in oil mixture and stir to coat the shrimp. Marinate shrimp for 1 hour.

In a large heavy-bottomed pan over high heat, add the remaining oil. Add shrimp with marinade and sauté just until shrimp are opaque in center, about 4 minutes. Transfer shrimp with a slotted spoon to a serving plate and drizzle with lemon juice.
