Michael Kalanty has been a baking instructor for more than 20 years and his How To Bake Bread series of books has won the Gourmand World Cookbook Award. He develops clean label and whole grain baking recipes for companies large and small, from Pepperidge Farms and Google to Shark Tank start-ups.
